Healthier Kung Pao Chicken

Ingredients-

500 grs green beans
1 large chicken breast
1 cup cooked brown rice
2 tbsps. garlic, minced
2 tbsps. of olive oil
1 tsp sesame seeds
1 tbsp. Sriracha or hot sauce
1 tbsp. chili paste
2 tbsps. reduced sodium soy sauce
1 tbsp. raw honey
¼ tsp. salt and pepper

Directions-

  • Season chicken with salt and pepper. Set aside.
  • Mix together the soy sauce, Sriracha, chili paste and honey in a small bowl and set aside.
  • Add 1 tbsp. of olive oil to a large skillet or wok.
  • Add 1 tbsp. of minced garlic and cook on medium-high heat.
  • Add the chicken and sauté for about 5 minutes.
  • Remove the chicken (it will only be partially cooked), and set aside.
  • Add the remaining tbsp. of oil and garlic in the pan and turn to high heat.
  • Add the green beans and sauté for 5–7 minutes, or until they begin to soften.
  • Add the chicken and continue to cook for 5 more minutes, or until the chicken is cooked.
  • Add the stir-fry sauce and reduce heat to medium-low. 
  • Cook for a few more minutes, until the sauce has reduced and thickened slightly.
  • Add sesame seeds, and let sit for at least 5 minutes, so the sauce can thicken a bit more.
  • Serve with brown rice.
  • Garnish with peanuts or cashews as desired.
