Grilled Kale and Chicken Salad

Ingredients-

½ cup of spinach
½ cup of kale
¼ red pepper
½ cup of green beans
¼ onion
¼ cup of pineapple pieces
½ chicken breast
Salt & Pepper to taste
Garlic powder to taste
1 chopped spring onion
Juice of ¼ pineapple
Olive oil
Pinch of cumin
Pinch of salt and pepper

Directions-

  • Grill the kale in a pan with a bit of olive oil.
  • Sauté the green beans, red pepper and onion.
  • Grill the pineapple pieces.
  • Grill the chicken with salt, pepper and garlic powder.
  • Assemble the spinach first, followed by the kale, pepper, onion, green beans, pineapple, chicken and spring onion. 
  • Mix the juice with the salt, pepper, oil and cumin and use as a dressing.
