Wild Rocket Salad


Ingredients-


2 cups of wild rocket
½ carrot, shavings
2 cloves of garlic
¼ mango, chopped
Garlic powder to taste
A handful of baby plum tomatoes, cut in half
½ cup fresh green beans
1 fillet of salmon
1 tsp. curry powder
1 tbsp. walnuts
Juice of 1 tangerine
Salt and pepper to taste

Directions-



  • Stir fry the green beans with chopped garlic in a bit of olive oil, when almost ready, add the tomatoes.
  • Remove the beans and tomatoes once cooked.
  • Grill the salmon in the garlic.


  • Mix the tangerine’s juice with the curry, pepper, garlic powder and salt.
  • With a potato peeler, shave the carrot.


  •  Set the rocket in a plate, topped with the green beans, carrot shavings, tomatoes, mango and salmon.
  • Pour the dressing on top when ready to serve.
  • Top off with walnuts.
