Avocado Chocolate Mousse

Ingredients-

1 Avocado
¼ cup cocoa powder
¼ cup plant based milk, almond, rice, coconut, hazelnut
¼ melted honey
1 tsp. vanilla extract
Pinch of salt
Handful of fresh or thawed fruits
1 can of coconut milk, refrigerated overnight
Seeds or nuts of choice


Directions-
  • In a blender, combine the avocado, cocoa, milk, honey, vanilla and salt.
  • Blend on full speed for 2 minutes.
  • Refrigerate for at least 30 minutes.
  • Open the coconut milk can and remove the top thick coconut cream layer.
  • Keep the water for smoothies.
  • Quickly whip the coconut cream and refrigerate.
  • When ready to serve, spoon the chocolate mousse on a glasses.
  • Followed by the fruits, coconut cream and seeds or nuts of your choice.
