Roasted Chicken Breast with Vegetables on Quinoa

Ingredients-

½ roasted chicken breast, no skin
½ cup green beans
½ cup mushrooms
¼ cup cooked quinoa
Pinch of salt and pepper
Pinch of garlic powder
¼ tsp. dried oregano
¼ tsp. dried basil

Directions-

  • Sauté the veggies in a pan with 1 tbsp. of olive oil.
  • Add salt, pepper, oregano, basil and garlic powder and cook until tender, about 10-15 minutes.
  • Serve with quinoa and top with roasted chicken breast, no skin.
