Directions-
- Roughly chop up the cauliflower heads and add them
to a food processor.
- Pulse until grainy.
- Spread evenly on a baking sheet.
- Bake at 220C/425F for 10 minutes.
- Lay a muslin inside a large bowl and add the cauliflower
into the towel.
- Let cool completely.
- Squeeze the towel to get the liquid out. It will be a lot!
- Add the rest of the ingredients and mix well by
hand.
- Shape into fist sized balls and transfer onto a
parchment paper covered baking sheet.
- Press the balls down to form circular pizzas. Make sure they are thin and even.
- Bake at 220C/425F for 10-15 minutes or until they
start to brown on the top.
- Flip them carefully and continue baking for another
10-15 minutes.
- Add your favourite toppings and sauce.
- Add your light mozzarella cheese and bake again
until the cheese has melted.
*Get creative and make cheesy fingers by adding
just mozzarella on top!
