Cauliflower Base Pizza

Ingredients-

2 heads of cauliflower
1 cup parmesan cheese
2 large eggs
¼ tsp salt
¼ tsp pepper
½ tsp oregano
½ tsp basil
½ tsp garlic powder

Directions-

  • Roughly chop up the cauliflower heads and add them to a food processor.
  • Pulse until grainy.
  • Spread evenly on a baking sheet.
  • Bake at 220C/425F for 10 minutes.
  • Lay a muslin inside a large bowl and add the cauliflower into the towel.
  • Let cool completely.
  • Squeeze the towel to get the liquid out.  It will be a lot!
  • Add the rest of the ingredients and mix well by hand.
  • Shape into fist sized balls and transfer onto a parchment paper covered baking sheet.
  • Press the balls down to form circular pizzas.   Make sure they are thin and even.
  • Bake at 220C/425F for 10-15 minutes or until they start to brown on the top.
  • Flip them carefully and continue baking for another 10-15 minutes.
  • Add your favourite toppings and sauce.
  • Add your light mozzarella cheese and bake again until the cheese has melted.
 
*Get creative and make cheesy fingers by adding just mozzarella on top!
