Vegetables Loaded Tacos

Ingredients-

1 tomato, chopped
A handful of button mushrooms, chopped
½ sweet potato, shredded
½ spring onion, chopped
1 cup of kale, chopped
¼ cup Greek yoghurt
1 tsp. lemon juice
½ tsp. chives
Salt and pepper
1 cup extra-lean mince meat
½ onion
¼ tsp. cayenne pepper
¼ tsp. chili powder
¼ tsp. garlic powder
2 multi grain wraps
Olive oil

Directions-
  • Sauté the onion in a bit of oil.
  • Once the onion has sweat, add the mince meat.
  • Cook for 2-3 minutes, add salt and pepper to taste, garlic, cayenne and chili powders and mix.
  • Cook for a further 2-3 minutes or until the meat is no longer red, stirring occasionally.  Set aside
  • Sauté the mushrooms in a bit of oil and set aside.
  • Sauté the sweet potato in a bit of oil and set aside.
  • Toss the kale with a splash of oil and grill it in a grill or pan, turning once after 1 minute.
  • When the kale starts to crisp, set aside, about 3 minutes total.
  • Mix the yoghurt with the lemon juice, a pinch of salt and pepper and chives, set aside.
  • Warm up your wraps in a pan, turning once.
  • Serve and enjoy!
