Sweet and Sour Chicken with Quinoa



Ingredients-

1 cup of cooked quinoa
1 cup of green Beans
½ onion julienne
½ cup of broccoli florets
Salt
Pepper
Garlic granules
1 cup of small mushrooms
1 tbsp. of honey
1 tsp. of chili paste
1 1/2 tbsps. of reduced sodium soy sauce
10 cashews
1 tbsp. of peas
½ chicken breast

Directions-

  • Sauté the green beans, onion, and broccoli in a bit of oil, add salt, pepper and garlic granules or powder, to taste.
  • Cook until a bit tender but not yet ready, about 5-7 minutes.  Set aside. 
  • In the same pan, sauté the chicken for 10 minutes, turning once. 
  •  Add the mushrooms and other veggies in, add peas and keep cooking until the chicken is almost done. 
  • Mix 1 tbsp. of honey, with 1 1/2 tbsp of reduced sodium soy sauce and 1 tsp of chili paste or 1/2 tsp of chili sauce, (if you want it hotter, add more chili).
  • Add to the veggies and cook thoroughly. 
  • Add cashews once finished.
