Salad with Quinoa Patty

Ingredients-

1 cup cooked quinoa
½ cup cooked broccoli
1 shredded carrot
½ chopped onion
3 tbsps parmesan cheese
2 tbsps ground almond
1 egg
Salt & pepper to taste
1 tbsp. garlic powder/granules
½ shredded carrot
½ cucumber Julienne
½ cup spinach
¼ sliced celery


Directions-

  • Mix all the ingredients, making sure they are well blended.
  • Heat a bit of olive oil in a pan.
  • Form patties and cook them for about 3-4 minutes on each side.
  • Serve on top of spinach, carrot, celery and cucumber.
