Dates and Almond Butter Truffles

Ingredients-

1 ½ cup dates
1 tbsp. walnuts
Pinch of salt
1 tbsp. almond butter or peanut butter (organic)
¼ tsp. virgin coconut oil
1 tbsp. shredded coconut

Directions-

  • Cut or chop the dates in half.  They will be very sticky.
  • Add the dates along with the salt and walnuts into a food processor.
  • Process until a paste forms, about 4-5 minutes.
  • Form into bite size balls.  If too sticky, rub a bit of olive oil in the palm of your hands.
  • Freeze for 20 minutes.
  • Add the coconut oil and the almond butter in a saucepan and warm up for about 2-3 minutes on low heat.
  • Remove once smooth.
  • Drop the truffles into the almond butter, one by one and coat them in the shredded coconut.
  • Put in the fridge until ready to eat.
