1 cup of fresh broccoli
1 cup of fresh green beans
3 tbsps. of Olive oil
1 cup, sliced fresh mushrooms
1 sliced onion
1 tbsp. chopped rosemary
3 tbsps. white wine
Salt & pepper, to taste
1 tbsp. garlic granules/powder
1 tbsp., roasted pine nuts
1 salmon fillet
Dried coconut, enough to coat the salmon
1/4 tsp. of nutmeg
1/2 cup of cooked brown rice
Instructions-
- Add 1 1/2 spoons of oil to pan on medium high heat.
- When hot enough, add the broccoli and green beans and cook for 1 minute.
- Add the wine as well as salt, pepper and garlic.
- Mix well and continue cooking for a further 4 minutes on medium low heat, stirring occasionally.
- Add the mushrooms and cook for a further 2 minutes.
- Add the onion and rosemary and continue cooking until cooked throughout, about 5 minutes.
- Heat up another pan and add the pine nuts and roast them, about 3 minutes. Keep an eye on them.
- Set the pine nuts aside.
- Add the rest of the oil to a pan and heat up to medium high.
- In the meantime, add a bit of oil to both sides of the salmon.
- Add salt, pepper and nutmeg to the coconut and coat the salmon.
- Cook the salmon on the pan for about 5-6 minutes or until done, turning it once.
- Serve the rice, followed by the veggies, the salmon and topped with the pine nuts.
- Enjoy!
