Quinoa Cheesy Garlic Fingers

Ingredients-

1 cup cooked quinoa
½ cup cooked broccoli
1 shredded carrot
½ chopped onion
3 tbsps parmesan cheese
2 tbsps ground almond
1 egg
Salt & pepper to taste
1 tbsp. garlic powder/granules
¼ cup light mozzarella

Directions-

  • Mix all the ingredients, apart for the mozzarella.
  • Make sure they are all well blended.
  • Add the mix onto a lined baking sheet.
  • Flatten it out making a big rectangle about 0.5cm/1/4” thick.
  • Bake at 180C/350F for 20-30 minutes or until brown.
  • Top with mozzarella and continue cooking until the mozzarella has melted and browned.
  • Cut into rectangles and enjoy!
