Flan / Creme Custard



Ingredients-

Sugar -------------------------------- 2/3 Cup
Eggs (medium) ---------------------- 5
Milk --------------------------------- 1 Cup
Condensed Milk --------------------- 14 oz 
Heavy Cream ----------------------- 16 oz
Vanilla Extract ---------------------- 2 Teaspoons

Terminology-

 American heavy cream = British whipping cream

Instructions-
  • Preheat the oven to 350F or 175C.
  • In a small non-stick pan heat the sugar in medium heat.  Once the bottom sugar has disolved, lift the pan off the heat by 2-3 cm and rotate slowly in circular motion until all the sugar has disolved.  Do not rush this process.



  • Once the sugar has become a golden syrup, pour into a 1 1/2 quart baking dish and swirl to coat the bottom of the pan evenly. Do this process quickly as the syrup will harden fast.  If you missed parts of the bottom of the dish, not to worry, it will even out in the oven once it's cooking.


  • Now, blend all the above ingredients in the blender for 1 minute.


  • Pour over the caramelised dish.

  • Place the filled baking dish into a larger pan and add 1 inch of HOT water to the outer pan.


  • Bake in the oven for 50 to 60 minutes, or until set.


  • Let cool outside the oven. 


  • For better taste and if you can help it, leave in the refrigerator overnight.  You will not be disapointed you did this.
