Green and Yellow Courgetti al Pesto

Ingredients-

4 courgettes
1 Avocado
3 garlic cloves
A handful of fresh basil
1 tbsp. pine nuts, roasted
1 tbsp. parmesan cheese
1 cup spinach
Salt and pepper to taste

Directions-

  • Spiralize the courgettes.
  • Add a bit of olive oil to a pan and sauté the courgetti until al dente.
  • Add the avocado, garlic, spinach, basil, cheese and pine nus to a food processor.
  • Process to a paste.
  • Add to the warm courgetti.
